I had a ton of ingredients leftover from the delicious African Chicken Peanut Stew I made last week, so I decided to throw them all into the crock pot again and get creative. This time, I left out the ginger and peanut butter. Instead, I added a can of garbanzo beans (washed and drained), a can of corn (washed and drained), a can of hot peppers, some half-dead kale from the corner of my fridge, coriander seeds, cumin, cayenne pepper, and turmeric. After about 8 hours in the crock pot I had another good four days of super tasty dinner! I love it when food experiments work!
