I absolutely LOVE creamy pasta sauce, but can’t eat it anymore (*shakes fist at lactose*). A couple years ago I stumbled upon some dairy-free creamy pasta sauce recipes. I was finally able to eat creamy sauce again! Sort of. Using cauliflower, I was able to mimic a cream sauce — and it tastes delish. But, I’ve been looking for an alternative to shake things up. Thanks to a blizzard, boredom, and some sad over-ripe avocados hanging out in my kitchen, I think I’ve found it!
This recipe is super easy and only takes a few ingredients. You’ll need a food processor or blender though. Here’s the stuff:
- 2 avocados
- A bunch of basil
- A few cloves of garlic
- Olive oil
- Lemon juice or a couple lemons
- A food processor
Add all the ingredients (starting with about 2 tablespoons of lemon juice) to the food processor EXCEPT the olive oil and use the puree setting to blend it all together. After about a minute of blending, add a couple tablespoons of olive oil and continue blending the sauce. Blend the mixture for about five minutes off and on — taking breaks to push the sauce that’s splashed onto the side of the food processor back into the mixture. Keep tasting it to make sure it’s got a flavor you like and adjust the recipe as necessary (heck, add some cayenne if you want to add a kick!). You’re looking for a creamy consistency that’s not too thin and not too thick. But I’m warning you, it’ll start off too thick. To thin it out a bit add more lemon juice and olive oil one teaspoon at a time. Add olive oil/lemon juice, blend, check consistency, repeat. Once you’ve reached a consistency you like then you’re done.
Note: I used 1.5 avocados, not the whole two. I really should have used the whole two — argh! Next time. Still tasted bomb.com. Also, I didn’t add salt and pepper, but you totally can.
Can I take a moment to tell you just how good this tasted? Yeah? Thanks. This tasted freaking great! Not only does this have the creamy taste and texture of your usual cream sauce, but it’s super healthy too! Much healthier than regular cream sauce. Making something so tasty out of a few healthy, common ingredients always brings a smile to my face.
I used the sauce with Trader Joe’s lemon pepper pappardelle pasta and Trader Joe’s chicken sausage. I can totally see myself using this as a veggie or cracker dip, or adding a couple spoonfuls into some savory oatmeal. So many possibilities!
