Today, I had a hankering for pizza. (Let’s be real, I ALWAYS have a hankering for pizza.) But, I can’t eat cow’s cheese. Boo! So, I got a little creative with some stuff in my fridge. Here’s a recipe I made up today that put a smile on my face.
I was lucky enough to already have all the ingredients in my fridge. All you’ll need is:
- Goat cheese
- Prosciutto (optional, I just love any reason to eat prosciutto)
- A tomato
- Sun dried tomatoes
- A bunch of basil
- Olive oil
The recipe is super easy! First, spray a baking sheet a with non-stick cooking spray and pre-heat the oven to 400 degrees. Second, get the ingredients ready — slicing the tomato and garlic — and plop them onto the flatbread. Lay the tomato slices, garlic slices, basil, prosciutto, and sun dried tomatoes onto the flatbread. Sprinkle chunks of goat cheese on top, then drizzle a couple tablespoons of olive oil over everything. Feel free to add fresh ground black pepper, salt, and crush red pepper on top if you’d like. That’s totally optional — I didn’t and it was still very flavorful. The goat cheese and prosciutto add enough of a salty flavor for me. Once you’ve got everything you want on the flatbread, stick it in the oven and set a timer for 15 minutes. It should only take 15 to 20 minutes to cook. Don’t leave it in the oven too long — you don’t want it to burn!
Side note: You can also roast the garlic before adding it to the flat bread. I’m going to try that over the weekend and let you know how it goes.
Done! How easy was that? You’ve got a healthy, delicious flatbread pizza. You’ll probably have a lot of ingredients left over, which is great! I love snacking on goat cheese and sun dried tomato wrapped in prosciutto. Might as well throw some basil in there, too. You can also chop up sun dried tomato and mix it into the goat cheese to create a sun dried tomato/goat cheese spread for crackers. Get creative with it! But, please do enjoy the pizza!
